Zuchini fritters (KABAK MÜCVERI)

The best way to incorporate zuchini in to your diet is by making fritters. It is loved by children and adult alike.I tried these fritters when I was in Sri Lanka. I added chopped coriander(cilantro) leaves and Parsley(flat leaf) and it was so flavorful .In Turkey they add fennel leaves instead of coriander leaves. I tasted this in a home in Izmir and from that day it is one my favorites. Fennel really works well in these fritters. Do not worry if you do not have any of these herbs.Spring onion go well too.I will leave it to your imagination.These fritters go well with garlic yogurt but my lovely daughter enjoys it with tamarind chutney.

These fritters are  a good substitute for burger patties.

Time:20+30 minutes for standing zuchini with salt to draw  the moisture                  

Makes 20 fritters

5 nos Zucchinis,grated

1 medium carrot,grated

1 onion, chopped

3 garlic pods,peeled and chopped finely

1 tsp paprika

1/2 tsp chili flakes,optional

1/4 tsp fresh black pepper

1 bunch coriander leaves,chopped

2-3 fennel sprigs,chopped

1/2 a bunch parsley,chopped

1/2 tsp thyme, optional

1 red chilli,sliced

1 egg

3 -4 tbsp flour,it depends on the moisture of the zucchini(if you find it too watery add more flour ) chick pea flour works well too.

1/2 tsp cummin powder

any white cheese,optional(I didn’t use though)

salt to taste

oil to shallow fry


1.Grate the zucchini with the box grater or use a grater attachment of a  food processor.I used a box grater  to grate.

2.Place a muslin cloth over a colander and put the grated zucchini and a bit of salt and leave aside for 30 minutes (if you do not have a muslin cloth use a white cotton cloth).

Grate the carrot and leave it aside.

3.Take a large bowl and add the grated carrot, flour, chopped onion, parsley coriander, fennel, cumin, paprika, black pepper, garlic, sliced chilli, cheese and the whole egg.

Please do not get confused!(I squeezed out the water and added zuchini to the mix below)

4.Draw all the corners of the muslin cloth and lift and twist the cloth in one direction.This helps to release more water from the grated zuchini.Squeeze out  as much as water from zuchini.This is how you squeeze out the water.

Add this with the rest of the ingredients and gently mix with a spatula.

4.Heat a large frying and add oil to coat the bottom of the pan.

When the oil is hot add 1 tbsp of the batter in the oil and flatten the batter with a wet spoon or wet your hands and form a small ball and flatten it slightly and drop in the oil. I followed the latter. Do the same with the rest of the batter.

Do not over crowd the pan.They should be well spaced for circulation of heat.

Fry them carefully and turn them once.

They brown quickly so take care  when frying. Fry on medium heat.

Serve hot with garlic yogurt or tamarind chutney.
