SNOWBALLS

Cookies make tea time and celebrations special.I make these cookies during  festivals and is loved by all.

If you are wondering why it is called snowballs it’s because  they are coated with icing/confectioner’s sugar, which resembles snowballs.

In Italy they are called wedding cookies and in Mexico wedding cake/cookies.

To get the best flavour I recommend using unsalted butter.

Feel free to use different nuts and spices to suit your palate.

 

Time: 10 minutes preparation+35-40 minutes baking                  Makes: about 20 cookies

 

Ingredients:                                                                                              

snow balls (1) (1)

125 grams butter, softened

50 grams caster sugar

1 tsp vanilla extract

150 grams freshly ground pecan

200 grams plain flour

½ tsp salt

1 tbsp pure maple syrup, optional

100 grams of Icing or confectioners sugar to dust.

 

Method:

1.Preheat the oven to 140°C/ 275°F.

2.Grease an oven tray with butter.

3.In a large mixing bowl add the butter and caster sugar; beat until fluffy.

 

4.Add the vanilla extract and beat for 30 seconds.

5.With a wooden spoon or spatula stir in the ground pecans followed by sifted flour and salt. Add the sifted flour in 3 batches.  Mix to combine.

6.Gently form the dough into balls the size of large marbles and flatten slightly.

 

7.Arrange on a greased tray and bake for 35-40 minutes

8.Remove from the oven and let it cool for a few minutes.

 

9.Dust with icing sugar.

When cool store in an airtight container.
