Sweet mango, buttery avocado, tender asparagus spears.
Gently bathe the trio in a tart and sweet tasting mirin and add a pinch off chilli flakes.
You get this salad.
Salads are usually straightforward to make and a more healthier option to your meal but the healthiness really depends on what seasoning you opt for. I prefer salad dressings which are light and do not overpower the vegetables or fruits, but complement them instead. Mirin does this well.
Time: 15 minutes including preparation
Serves: 3-4 persons
250 grams asparagus, cleaned, washed and cut lengthwise
1 medium ripe mango, cubed
1 avocado, cubed
2 tbsp mirin
A pinch of chilli flakes
Salt to taste
⅛ teaspoon freshly ground black pepper
1 tbsp extra virgin olive oil
1.Fill a small saucepan up with water until half full and bring it to boil. Add the asparagus and boil until tender. Rinse with cold water to refresh. Leave to cool completely.
2.Take a salad bowl; add the asparagus, mango and avocado.
3.In a small bowl combine mirin, salt, chilli flakes and black pepper.
4.Add the dressing to the salad and toss gently. Adjust the seasoning to your suit your taste.
