This is an ideal way to use up overripe bananas in summer.I have topped the bread with a few slices of peach.You can chop some peach slices and add it to the batter along with mashed bananas.
Serve it plain or buttered depending on your mood.
Time:Total of 1 1/2 hour (15 minutes +1 hr 15 minutes for baking)
Yields: 1 large loaf
500 grams overripe bananas (with skin)
250 grams self raising flour
½ tsp salt
125 grams unsalted butter
100-125 grams castor sugar
50 grams chopped walnuts
2 whole eggs, lightly beaten with a fork
2 tbsp honey
Grate rind of 1 lemon
1/2 tsp ground cinnamon, optional
1 Sliced peach
Preheat the oven to 180°C/350°F.
1.Peel and mash the bananas with lemon rind.
2.In a large bowl add the flour, salt and butter and mix it with your fingers until it resembles bread crumbs.
3.Add the sugar, eggs, honey, mashed bananas and walnuts and mix with a wooden spoon until the mixture is well mixed.
4.Transfer the mixture to a 1 kg loaf tin which is greased and base lined with parchment paper. Pour the mixture.Tip with peach slices.
5.Bake for 1 hour -1 hour 15 minutes.
6.Leave to cool in the tin for 5 minutes.
7.Transfer to a wire rack to cool completely.
Serve sliced and buttered if you wish.
